Why It’s Different:
Made from green walnuts for natural bitterness and structure, balanced with spice instead of heavy sweetness.
A seasonal favorite. Fresh walnuts are hand-harvested in the PNW and delivered to us overnight. We cut each nut in half and macerate with eight other ingredients, including citrus peel, allspice, vanilla, and roasted dandelion root, for three weeks in non-GMO neutral grain spirit. We strain and proof to 45% abv, then barrel-age for one year. During this time, the flavors are mellow and concentrated, revealing a nuanced and balanced liqueur. We strain out of the barrel, filter, sweeten with organic cane sugar, and bottle at 22% abv. This rendition of the classic nocino is less spice-forward, more complex, and less cloyingly sweet. Imagine that maple syrup and vanilla extract had a baby… that’s our nocino.
